How was your New Year’s? Did you eat all the good luck foods? I don’t know why, but my kids really like the idea of eating good luck foods and we’ve been doing it for a while now. I made black eyed peas in the instant pot because the store was sold out days in advance. There was a different brand but it had meat in them. I also made rice, kale chips, cornbread, vegan brats, 2 different fruit crisps, and this lemon Bundt cake in the instant pot.

I know, right? Cake? In an instant pot? This is from the Rainbowplantlife cookbook and it was super easy! I had some lemons from our last Misfits Market box. I made it with gluten-free flour.

Because the produce drawer was getting a little out of hand, I made a ginger cranberry pear crisp and an apple crisp.

Lastly, I dug out the Beyond Meat brats I had tucked away in the freezer. It’s not pork, but same idea. I have to say, I was pleasantly surprised with the taste and texture of these! Meat substitutes can be a little iffy, but these are good!
