Apple Cinnamon Raisin Baked Oatmeal

I feel a bit like I was cheating on my normal breakfast of Pumpkin Baked Oatmeal, but we had this giant jar of applesauce that needed to be eaten, so I came up with this. It’s also very fall-inspired flavor with apple, cinnamon, and raisins. I eat it cold so it’s also perfect for summer!

You could double up on the apple-ness with chopped apples in the mix instead of or in addition to the raisins.

Apple Cinnamon Raisin Baked Oatmeal

- 9×13” pan
Ingredients
- 3 cups applesauce slightly less if you like more dry baked oatmeal
- 4 tbsp flax meal
- 2/3 cup brown sugar
- 1 tsp salt
- 2 tbsp ground cinnamon
- 1/2 tsp ground cloves or nutmeg
- 2 tsp baking powder
- 5 cups rolled oats
- 3 cups plant milk
- 1/2-3/4 cup raisins optional, to taste
- chopped nuts for topping
- diced apple optional
Instructions
- Preheat oven to 375 degrees.
- Combine applesauce, flax meal, brown sugar, salt, cinnamon, cloves or nutmeg, and baking powder in a large bowl. Stir and add plant milk until well-mixed.
- Now add oats and optional raisins/diced apple and stir to mix.
- Pour into 9×13" pan.
- Bake for one hour or until golden brown on top.
- Refrigerate once it has cooled to room temperature. Store in fridge and eat cold, or reheat… it's up to you!
