Peanut Butter Date Bars

I somehow managed to open two boxes of puffed brown rice and one is nearing its expiration date. And with two perpetually hungry kids, we always need snacks. I’ve been making this recipe from Minimalist Baker’s cookbook for a while now, with my own modifications. You should totally check out that cookbook because there are so many good vegan recipes in it!
I made this in a cake pan because our square pan has Pumpkin Baked Oats in it. Also, I don’t make the chocolate topping because we don’t care for that much chocolate. I will usually sprinkle a few Enjoy Life mini chocolate chips on top but we didn’t have any for this batch. Oh, and I use more dates than she calls for.
Anyway, on to the snacks!

Peanut Butter Date Bars
Ingredients
- 1 cup nut butter of your choice
- 1/2 cup maple syrup
- 10 Pitted dates chopped
- 3.5 cups puffed brown rice
- Vegan chocolate chips optional, for sprinkling on top
Instructions
- Chop dates
- Combine maple syrup and peanut butter in a large saucepan on medium heat. Add dates and stir to mix.
- Once everything has thoroughly come together, add puffed rice and stir until completely coated.
- Put mixture in cake pan or 8×8’ pan.
- Store, covered, in refrigerator. Keeps for 4(ish) days before the puffed rice starts getting chewy.
