Vegan Banana Baked Oatmeal

I made this Banana Bread Oatmeal recipe from Budget Bytes and omitted the eggs. I guess I could have substituted with egg replacer or flax eggs, but there was a baked oatmeal recipe I used to make and I never used eggs, so I tried it that way. This may be my new favorite baked oatmeal recipe! It’s sweet enough that it doesn’t need any maple syrup. I eat mine cold but Beth Moncel shows it with milk and I may have to try it that way tomorrow.
